5 Delicious Recipes for the Fall Season

Oftentimes, at the turn of the season and the start of the holidays, my palate changes.  No longer do I crave strawberry salads, watermelon, or hamburgers and hot dogs hot off the outdoor grill.  I start craving those fall foods.  In realizing this, I decided to

chat with senior Nutrition major Andi Zaferes (’15), who not only utilizes nutrition in her academics, but loves to come up with healthy, flavorful recipes.  Through our interview, Andi gave me some delicious recipes perfect for the colder weather.  They’re healthy, too, so you don’t have to feel guilty for indulging!  Try out these 5 delicious recipes for the fall season.

1. The Sweet Potato and its Incredible Versatility

The white potato’s lesser-known sibling sounds simple, but there is so much you can add to make it a main course, or even a dessert. Here are a few of our favorites:

  • A Taste of Thanksgiving: Top with pumpkin pie spice, cinnamon, pecans, and 100% pure maple syrup for a tasty dessert. (Be careful about how much syrup you add!)
  • Sweet Potato with Egg: Top with a fried egg, avocado, and salsa for a fun spin on breakfast.
  • A Savory Snack: Top with almond or sunflower seed butter.
  • Mexican Sweet Potato: Craving one last taste of warm weather? Top with black beans, salsa, guacamole or avocado, and non-fat plain greek yogurt.
Wash the sweet potato, and pierce it across the top two or three times.  Wrap the sweet potato in a coffee filter or paper towel, and put it in the microwave for 5-7 minutes.  Then choose a recipe above, and go to town!

2. Pumpkin Overnight Oats

The Overnight Oats concoction revamps your classic bland oatmeal breakfast.  It’s a super easy and portable meal that comes in handy on your busiest of mornings.

  • 1/2 cup whole grain rolled oats
  • 1/2 cup or 1 container nonfat vanilla or plain greek yogurt
  • 4 oz almond milk (or milk of choice)
  • 3 tbsp canned 100% pure pumpkin
  • Optional: 1 tbsp chia seeds, pumpkin pie spice, and cinnamon

Combine the oats, yogurt, and milk in a bowl.  Mix in the pumpkin and chia seeds, cover the bowl, and leave it in the refrigerator overnight.  In the morning, top with pumpkin pie spice, cinnamon, or whatever else your heart desires, and enjoy!

3. Quinoa Kale Squash Salad

This healthy autumn entree will leave you feeling refreshed and satisfied.

  • 2 cups kale
  • 1/2 cup cooked quinoa
  • 1/2 cup cubed butternut squash
  • 1/4 cup dried cranberries
  • 2 tbsp balsamic vinaigrette

Follow the package directions for cooking the quinoa.  Top the quinoa with kale, butternut squash, dried cranberries, and drizzle with the vinaigrette.  (Sometimes I make my own homemade vinaigrette by mixing 1/2 tbsp of olive oil with 1.5 tbsp balsamic vinegar.)

4. Beet Hummus

This veggie-based dip is better than it sounds!

  • 2 medium beets (clean and roasted)
  • 1 can of chickpeas
  • 2 large cloves of garlic
  • 1 lemon (juiced)
  • 2 tbsp olive oil
  • optional: 2 tbsp of Tahini

Blend all ingredients in a blender or food processor and voilà! Dip some vegetables or pita chips in your homemade dip and enjoy.

5. Veggie Chili (with all the fixin’s)

Now here’s a healthy spin on a big fall favorite, without sacrificing taste. There are even some add-ons to make the recipe even zestier!

  • 2 cans Amy’s Vegetarian Chili
  • 1 can tomato sauce
  • 1 cup diced tomatoes
  • 1 cup canned corn
  • 1 mashed avocado
  • onions and chives

Follow the cooking directions on the Amy’s chili cans (it will be the stovetop directions), and mix in the tomato sauce.  Put the tomatoes, corn, avocado, and onions/chives in separate bowls next to the prepared chili, and you have yourself a chili bar for you and all of your roommates or family!  The avocado and onions and chives add spice, and the tomatoes and corn make the meal more satisfying.
